Christmas Cranberry Chutney

Christmas Cranberry Chutney

This is a simple recipe, yet the resulting chutney is so full of flavor and colorful!


Nan’s Christmas Cranberry Chutney

2 cups fresh cranberries

2 cups sugar

3 Tbls. water

1 apple, chopped

2 celery ribs, chopped (I slice very fine in cuisinart)

1 Tbls. orange rind

1 cup orange juice

1 cup raisins (use golden)

1.2 teas. ground ginger

1/4 teas. ground cloves

cook cranberries, sugar and water for 5 minutes over medium heat. Then add all ingredients and continue cooking at a gentle simmer for about 30 minutes, stirring often. Let cool. As this cools, it will thicken. You will get about 3 cups of chutney.

Cranberry Chutney

This goes very well with ham. Place into jelly jars and share with friends and family!

Happy Thanksgiving Weekend!

We had a nice quiet, tech free (except for the Football game) Thanksgiving!

We had a lovely Thanksgiving. I was able to do an organic feast! My favorite thing we had was a Maple Pecan Pie. I used a gluten free crust, maple syrup, dark rice syrup, and pecans. I will post the recipe as this is easy and delicious and can be served at Christmas as well!

The kids at first were unnerved by the idea of tech free day (little did they know I had planned all weekend, but my husband overruled me on that!), after a bit, they really sat and visited and helped and it was very sweet. I enjoyed that tremendously.

I’d like to share some pictures of my not perfect home and oh so perfect family:)

Gratitude Challenge

Today is day 3

One of my quiet and faithful TOS crew leaders, Brenda, over at Garden of Learning, is doing a Gratitude Challenge for the month of November. I am pleased to join in and should be posting something I am grateful for each day.

For today, I am grateful to have too much to do.

Really. I am busy. Busy teaching kids, cleaning house, organizing grocery coupons and lists, cooking, washing sheets, cleaning that bathroom (maybe I should get to that), deciding what bloggy things I am doing…

And I am grateful for these things. Things I really do want to do. Things I chose to do. Sometimes they are humdrum and annoying, and most of them are never truly “done”.

But mostly, I enjoy taking care of my family, my home.

I tend to minimize it myself, but for now, my family is my mission. And that’s just fine with me.
