Christmas Cranberry Chutney

Christmas Cranberry Chutney

This is a simple recipe, yet the resulting chutney is so full of flavor and colorful!

Nan’s Christmas Cranberry Chutney

2 cups fresh cranberries

2 cups sugar

3 Tbls. water

1 apple, chopped

2 celery ribs, chopped (I slice very fine in cuisinart)

1 Tbls. orange rind

1 cup orange juice

1 cup raisins (use golden)

1.2 teas. ground ginger

1/4 teas. ground cloves

cook cranberries, sugar and water for 5 minutes over medium heat. Then add all ingredients and continue cooking at a gentle simmer for about 30 minutes, stirring often. Let cool. As this cools, it will thicken. You will get about 3 cups of chutney.

Cranberry Chutney

This goes very well with ham. Place into jelly jars and share with friends and family!

Weight Watchers Dairy — Login Day 2

Well, today was my true kick –off day! I was ready, after trying out the Weight Watchers 360 and the app last night. So far today, I am doing super well.

At 8 am, I was a bit shocked to realize my “bit” of milk in my coffee was actually a ¼ cup of milk and worth 1 point. I often have about 4 cups of coffee throughout the day, so there’s a cup of milk. I had a few light bulb moments like this as the day went on.

I did sit each time, while eating. I KNOW this will help me, because I am bad about eating little bits while fixing the kids meals. This way, nothing goes in my mouth unless I am sitting (except water/coffee!) I do better choosing all or nothing goals like this.

I had one frustration today.  I hate to be a Debbie Downer but I want to be brutally honest so others can see this from all angles. My frustration was with the barcode scanner. Many of my foods were not recognized by the scanner.

I have used My Fitness Pal before and I liked that scanner. For now, I figure it may be user error and I will keep at it, but I want to be able to scan and enter bar codes, not figure out every detail of a food myself. Even for some Natura Cabernet Sauvingnon…I could not find any calorie information even on the Natura website. I have not asked for help on the forum, so I should probably do that.

I guess my biggest wish right now would be that I could scan everything more easily. I’m about to make some homemade chili and I want my true calories not what someone else thinks may be in this. Hmmmm. This will take a bit of time.

But, nevertheless, I sit here today knowing I have eaten less and been more aware of my intake. I also did some cleaning, so a grabbed 1 extra weight watchers point for that. Tomorrow I hit the new Kinnect exercise video I got for Christmas.

I also got some things at the store to try a new recipe. This was a featured recipe on the app and is only 1 point!

Another plus is that my children are watching and becoming more aware of portion sizes. I have always taught them that, but it is true that they learn what they see me do…not always the same as what I say.

I’ve been thinking lately how hard it must be for Oprah to Christmas shop. I mean if you were on her “gift list” wouldn’t you expect something really, really good? The woman gives away cars and trips to Australia on her television show for goodness sake! It seems by the end of Christmas Day her friends and family would look at the pile of presents and think, “Is that it?” I mean if you knew there was billions of dollars she could spend on you, would you ever feel satisfied?

Sometimes I think we approach God the same way. We look around at our home, our family, our job, our free time and we still aren’t satisfied. We wish our body looked better, our clothes were more in style, our husband was more considerate and our kids were more … well, like the perfect little people we picture in our mind. Our careers don’t excel as quickly as we think they should and people don’t give us the attention we feel we deserve. We’re tired and anxious and the to-do list seems to be tacked to our hearts for all the pain it causes.

Often, we look around and don’t speak the words out loud, but think them just the same. “Is that it?” I mean, You’re the God of the universe and You have all things in Your hands and under Your control. Couldn’t you provide a little more money to help those bills disappear or make me a bit more content with the man I’ve chosen to spend my life with? And I thought Oprah had it tough.

Is there ever a time when God doesn’t hear the murmurs? Again, not with our mouths but in our heart.

I’ve been guilty of this–of not being satisfied with the gifts I’ve been given. Yes, there will always be more to want, but today–at this moment–I’m satisfied. And I look to Him with a grateful heart and whisper, “Thank you, it is enough. More than enough.”

Each year, as I look forward to our Christmas Traditions, I also try to incorporate new traditions. For our household, my husband and I celebrate Christmas with what we hope is a focus on Jesus’ birth. A few of the things we do include using Advent Calendar readings and candles in the evenings, preparing a Christmas Tree as a family, and even getting stockings and cookies and milk ready for Santa.

As mom, I do struggle sometimes with what traditions to include and focus on for my family and I am thrilled when an idea or activity really fits our family and helps us celebrate the Savior’s Birth.
